MANGO QUINOA SALAD

SERVES: 6

PREP TIME: 25-30 MINUTES


INGREDIENTS:

1 ½ cups quinoa, precooked and chilled

1 ½ cups black beans, precooked and chilled

1 medium mango, diced medium

½ small red onion, finely diced

2 tablespoons cilantro, chopped

Juice of 1 lime

1 tablespoon olive oil

1 teaspoon salt

½ teaspoon black pepper

1 medium Hass avocado, diced medium


DIRECTIONS:

  1. In a large bowl, mix together quinoa, black beans, mango, onion, cilantro, lime juice, olive oil, salt, and pepper.

  2. Add avocado and gently toss together.

  3. Serve with tostadas, saltines, or in lettuce wraps.
